Celebrate Earth Week and the return of all things light and bright with a simple plant-based spring menu. Featuring artichokes, leeks, lemons and a yummy Alfredo sauce, the menu has been designed to serve either as a 4-course meal, or for mixing and matching to create a variety of lunches and dinners. You will learn simple techniques that can be applied to multiple dishes to carry you through the spring season and beyond.

Linda Sheehan is a plant-based cook and educator with a BA in Health Psychology and a Certificate in Plant-based Nutrition. Living a plant-based lifestyle has allowed her to move into greater alignment with her deeply held values of compassion for all living beings and reverence for nature. Though human nutrition and personal health are a primary focus, she is most grounded in this lifestyle by its impact on animal welfare and environmental health.
